CRUNCHY POTATO PANCAKES WITH PORK LOIN, FRESH TOMATO AND CHEESE

Ingredients: Cheese (Holland’s or any other that melts easily) – 100g Potatoes – 0.5kg Pork loin – 120g Fresh tomatoes – 120g Salt and pepper Olive oil – 70g

Preparation: Grate the potatoes on a coarse grater, add salt, pepper and fry on a hot frying pan until ready. Cut the pork loin in thin slices, beat it, and season it with some salt and pepper. Then place it on a hot frying pan and fry for 5 to 7 minutes. Rinse the tomato and cut it in thin slices. Grate the cheese on a fine grater.

Lay everything on a pan in a tower-like construction. Use the pancake for the basis, then place the fried pork loin on top, then – the slice of tomato and the grated cheese. Make 3 layers, pin it all together with a chopstick so that it stays in place. Place the tower in a 200 degrees hot oven until the cheese has melted.
